Mint-flavoured variety rice is a refreshing and flavorful dish that can be easily prepared. Here’s a simple recipe for mint-flavoured variety rice
Ingredients:
2 cups cooked rice
1/2 cup fresh mint leaves
1/2 cup fresh coriander leaves
1/4 cup grated coconut
1 tsp cumin seeds
1/4 cup peanuts, roasted
1/4 cup roasted chana dal (split chickpeas)
2-3 green chilies, chopped
1 tsp ginger garlic paste
1 tbsp lemon juice
1/4 tsp turmeric powder
Salt to taste
2 tbsp oil
Instructions:
Wash and clean the mint leaves and coriander leaves. Keep them aside.
In a blender, grind mint leaves, coriander leaves, grated coconut, cumin seeds, roasted peanuts, roasted chana dal, green chilies, ginger garlic paste, and salt to a fine paste.
In a pan, heat oil over medium heat. Add the ground paste and turmeric powder and fry for 2-3 minutes.
Add cooked rice to the pan and mix well.
Add lemon juice and mix again.
Adjust salt to taste and mix everything well.
Turn off the heat and let the rice rest for a few minutes to allow the flavors to meld together.
Serve the mint-flavoured variety rice with raita or papad.
