Ingredients:
250g kovakka (ivy gourd), thinly sliced
1 onion, thinly sliced
1 small tomato, chopped
1/2 green chili, finely chopped
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 sprig curry leaves
1/2 tsp salt
1/2 tsp sugar
2 tbsp lemon juice
1 tbsp grated coconut
1 tbsp chopped coriander leaves
Instructions:
In a mixing bowl, combine the sliced kovakka, onion, tomato, and green chili. Set aside.
In a small pan, heat a tablespoon of oil over medium heat. Add mustard seeds and cumin seeds and allow them to splutter.
Add curry leaves to the pan and fry for a few seconds.
Pour the seasoning over the vegetables in the mixing bowl.
Add salt, sugar, and lemon juice to the bowl and mix everything well.
Finally, add grated coconut and chopped coriander leaves and mix everything well.
Let the salad rest for a few minutes to allow the flavors to meld together.
