Ingredients:
2 eggs
1/2 cup besan (gram flour)
1/4 cup rice flour
1/2 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
Salt to taste
Water as needed
Oil for frying
Instructions:
In a mixing bowl, beat the eggs well with a fork or whisk.
Add besan, rice flour, red chili powder, turmeric powder, cumin powder, and salt to the eggs. Mix well.
Add water little by little to make a thick batter. The consistency should be such that the batter coats the back of a spoon.
Heat oil in a frying pan on medium heat.
Dip the boiled eggs into the batter and coat it well.
Drop the egg into the hot oil and fry till it turns golden brown.
Remove the fried egg bajjis using a slotted spoon and place them on a paper towel to drain off any excess oil.
Serve hot with your favorite chutney or sauce.
